Flavour Profile: Chocolate Orange Gelato
Each month, we’ll be highlighting one of our gelato flavours and telling the story behind the recipe. This month we’re looking at Chocolate Orange – a firm favourite for foodservice customers (and the Signature flavour in March’s Pint Club!).
Alongside our classic flavours like Vanilla and Pistachio, we wanted to include some more experimental flavours that would bring a sense of fun and whimsy. Our Chocolate Orange is just that – combining a rich dash of orange and smooth, creamy chocolate together into a dessert that’s both novel yet familiar for anyone who has ever has a chocolate orange at Christmas.
Our Chocolate Orange is packed with organic, Fairtrade cocoa and 100% orange oil to create a gelato that is both velvety and smooth but with an intense citrus undercurrent. The rich creaminess from our plant milk gelato base (made using sustainably-grown cashews) complements and enhances these flavours, creating an ice cream that is both decadent and luxurious.
Key Ingredient: Orange Oil
When we created this gelato we tried several different approaches to create an orange flavour that was ethical and sustainable as well as cutting through the strong chocolatey base. We experimented with organic fruit juice and concentrates, but they added too much liquid to the mix and didn’t bring a strong enough flavour.
Instead, we settled on a 100% natural orange oil, which is collected from orange peel during the juicing process. This provides a strong, hard-hitting flavour that stands up to the chocolate overtones in the gelato with a contrasting flavour that’s fresh, sweet and completely delicious.
