The Best Vegan Chocolate Brownies

Brownies are one of those dessert staples that everyone should have in their recipe collection. At their best, they are rich, slightly gooey and packed with chocolate.
We were given this recipe by Beth at @vecreation – the queen of plant-based baked goods – and it really is the bomb!
If you want, you can customise it to suit your particular brownie preferances by adding a sprinkling of sea salt on top before baking or adding some vegan chocolate chips to the batter – but it’s equally amazing just as it is (preferably served with a dollop of Beau’s Pistachio ice cream)!
PREP TIME: 10 MINS
COOKING TIME: 30 MINS
MAKES: APPROX. 8 BROWNIES
Ingredients
250g dark chocolate
15g dark cocoa powder
200g caster sugar
130g oat milk
20g vegan butter
250g plain flour
1/8 tsp baking powder
Method
1. Preheat your oven to 170°C. Line an 8” square baking tin with greaseproof paper.
2. In a bowl add flour and baking powder and mix well.
3. In a saucepan, add the chocolate, cocoa powder, sugar, milk, and butter and stir on a medium heat until melted and combined.
4. Add all the mixture to the flour bowl and mix until it is a nice thick batter. Pour into your baking tin and spread the mixture evenly; give it a shake to level it out.
5. Bake for 30 minutes in a fan oven. Once baked, lift from tin and place on a cooling rack to cool completely. Cut into pieces and serve with a scoop of vegan gelato!
