White Chocolate Chunky Vegan Blondies

VEGAN – VEGETARIAN – DAIRY FREE – SOY FREE

Soft, buttery and incredibly moreish – these plant-based blondies are perfect served straight out of the oven with a dollop of ice cream on top. With only nine ingredients, this recipe is super simple to put together!

PREP TIME: 15 MINS | COOKING TIME: 30 MINS

Recipe makes approx. 9-12 blondies

INGREDIENTS

250g plain flour

1 tbsp Cornflour

1g Sea Salt

¼ tsp Baking Powder

75g Roughly chopped White Choc

300g Soft Brown Sugar

170g Plant Butter

100g Plant Milk

1 hefty tsp vanilla extract

Pumpkin Spice Gelato (Optional, to serve)

Method

1. Mix the flour, cornflour, salt, baking powder and chopped white chocolate in a large bowl. Set aside.

2. In another large bowl add the sugar, butter, plant milk and vanilla extract and beat together with a wooden spoon or electric mixer for 2 – 3 minutes until the mix becomes well combined and creamy.

3. Fold the wet ingredients into the dry.

4. Pour mix into a greased cake or brownie tin and bake in the oven at 170°C for 25-30 minutes.

5. Serve straight away with your gelato for a cosy autumnal dessert, or allow to cool and cut into squares.

If you don’t manage to eat them all in a single sitting, the blondies can be stored in an airtight container for up to a week.
