Irresistible Vegan Cookie Ice Cream Sandwich

While the traditional accompaniment to ice cream will always be the trusty wafer cone, at Beau’s we have an enormous soft spot for extravagant ways to enjoy gelato.
Of these, surely the naughtiest is the ice cream sandwich – two chocolatey cookies pressed together, oozing with rich gelato filling. It’s not going to fit into a diet plan – but it’s certainly the kind of comfort food than can bring a spark of joy into a dull, rainy winter day.
Key to this is finding a decent vegan cookie recipe, which is harder than you’d think! Having tried and tested several, we’ve come up with our own recipe for vegan choc chip cookies that pair perfectly with a scoop of whatever vegan ice cream flavour you have to hand.

MAKES: APPROX. 6 COOKIES

400g Plain Flour
1 ½ tsp Baking Powder
½ tsp Bicarbonate of Soda
Large pinch of Sea Salt
120g Chocolate Chips
160g Brown Sugar
140g Golden Caster Sugar
150g Plant-based Butter
75g Vegetable Fat
Glug of Vanilla Extract
1 tbsp Cornflour
3 tbsp Water
Method
1. In a large bowl combine the dry ingredients (incl. choc chips). Set aside.
2. In another bowl mix the butter, vegetable fat, sugars and vanilla extract until creamy and smooth.
3. In a small bowl add cornflour and water and mix with a fork.
4. Add the dry ingredients and cornflour mix to the wet ingredients and combine. Start with a wooden spoon but be prepared to get your hands in there!
5. Pop the mixture into a covered bowl and refrigerate for an hour or so.
6. Preheat your oven to 180°C/Gas Mark 4 and grease a baking tray. Once the dough is chilled, remove from fridge, grab your trusty ice cream scoop (or a spoon will work too!) and scoop out balls of dough onto your baking tray.
7. Bake for 10-12 mins or until the edges start to go golden. Remove from the oven and give the tray a sharp whack on a worktop to flatten out the cookies and give you that yummy, crinkly top. Leave the cookies on the tray for 5 minutes, and then remove them with a spatula onto a wire rack to cool.
8. Once cooled, add a generous scoop of ice cream (we tend to use Stracciatella) onto the underside of one cookie, pop another cookie on top, et voila! The ultimate Gelato Cookie Sandwich.
