If you love Cherry Bakewells then you are going to love this recipe for a Deconstructed Cherry Bakewell Tart.

The Bakewell Tart (not to be confused with a Bakewell Pudding!) is an English Classic from the Derbyshire Dales, combining glacé cherries, frangipane (a sweet almond custard) and icing. We’ve taken this traditional recipe apart and reworked it as a gelato-based treat, using crumbled cookie pieces, flaked almonds and our Sour Cherry gelato to recreate the taste profile of a Bakewell in a multi-layered tower of deliciousness.

PREP TIME: 5-10 MINS

(Makes 1 Deconstructed Bakewell)

3-4 scoops Sour Cherry gelato

1-2 tsp Flaked Almonds

1 Chewy Almond Cherry Cookie*

METHOD

1. Take a small- or medium-sized glass and crumble in part of the cookie until you have a layer covering the bottom of the glass.

2. Using an ice cream scoop or a tablespoon, add a layer of Sour Cherry gelato.

3. Sprinkle a layer of flaked almonds over the gelato (these can be crushed beforehand if you don’t want large pieces of almond in the dessert).

4. Repeat these steps until you reach the top of the glass, then grab a spoon and dig in!
