Banana Pecan Bread Recipe
Foolproof and super easy to make, this spiced and nutty banana bread is perfect served straight out of the oven with a generous scoop of gelato.
If you’re anything like us, there are always a couple of bananas left over at the end of the week blackening to a state of overripeness – this is the perfect way to use them up and create something delicious at the same time!
Ingredients
3 Ripe Bananas
300g Plain Flour
100g Soft Brown Sugar
120ml Oil
Handful of roughly chopped Pecans
60ml Plant-based Milk
½ tsp Apple Cider Vinegar
1 tsp Cinnamon
1 tsp Baking Powder
¼ tsp Baking Soda
Method
Preheat your oven to 160°C
Mash the bananas in a small bowl and then set to one side.
In a mug or small bowl, add plant milk and apple cider vinegar. Leave for 5 minutes.
In a large bowl, add all of the dry ingredients (including sugar and nuts) and mix.
Add the bananas, plant-based milk mix and oil to the dry mix & stir.
Pour the mix into lightly greased loaf tin and pop in oven.
Bake for 55 minutes.
Serve with a generous scoop of gelato and tuck in!
